Budgeting and grocery shopping is one of the best ways to trim down your monthly expenses and daily spending- but there are dozens of challenges out there- especially the advice that is ultimately unrealistic. Some articles seem too unreasonable to be applicable. More often than not, it comes down to unrealistic costs of groceries . For example, I cannot find 1 gallon of milk at my local Walmart for $1. And our Dollar Tree out in Montana doesn't have a grocery section- we do have a freezer section, but it is only 2-3 doors of frozen dinners. CHUCKWAGON CASSEROLE

Chuckwagon Casserole was one of my favorite recipes as a kid. Almost any time I was asked what I wanted for dinner, Chuckwagon Casserole sprang to mind! It's rustic, filling and just sweet enough for that spicy chili filling. Cornbread tops it, rounding out the flavor. Chuckwagon Casserole is basically just chili with cornbread baked on top- however, I could never get the image of an old pioneer wagon out of my 11-year old mind. I honestly daydreamed that this must have been eaten on the Oregon Trail.... Anyways, here is my beloved recipe.

Chuckwagon Casserole Recipe

Ingredients

  • Ground beef  or ground turkey
  • 1 cup beef broth 
  • 1 Green Bell Pepper, chopped
  • Fajita or Chili season mix from a packet
  • 1 can of diced tomatoes
  • 1 can of tomato paste
  • Salt and Pepper
  • Paprika
  • 1 Onion, chopped
  • 1 Garlic clove, minced
  • 1 can of kidney beans
  • 1 Egg (for the cornbread)
  • 1 box of Jiffy Corn Bread Mix
  • Milk (for the cornbread)

Directions

  • In a medium saucepan: combine chopped onion, minced garlic, salt and pepper and ground meat. Brown the meat until fully cooked.
  • Combine meat, bell peppers, diced tomatoes and tomato paste, and kidney beans to a pot
  • Add chili seasoning and beef broth
  • Cook at medium for 2-4 hours, stirring often. Add additional seasoning and water as needed- make sure it stays thick though.
  • Once the chili is finished cooking- follow the Jiffy Corn Bread mixing directions
  • Pour the chili into a casserole dish and pour the Jiffy Corn Bread Mix on top
  • Bake at the temperature instructed for the corn bread mix.
