Beans and Rice recipes- a perfect meal for just about any number of people in the family. It has all the essentials (protein + veggies + grains) plus it's extremely budget friendly. It is definitely less than $2 per person!

Beans and Rice with Steak Tip

Ingredients

  • Bell pepper
  • Rice 1 cup
  • 1 cup chicken broth ½ cup water
  • Steak tip (only used ½ but cooked all, used the second ½ for leftovers)
  • 1 can of tomatoes
  • 1 can of kidney beans

Instructions

  1. Cook rice as instructed (1 cup + 1 cup of liquid = microwave for 6 minutes)
  2. Chop bell pepper
  3. Combine vegetables with rice in a bowl and mix together
  4. Heat the can of tomatoes, then add the rice and beans to the bowl
  5. Salt and pepper steak tip, add them to a hot pan and cook to desire temperature- rest when finished and then dice for dish

Cost

  • Bell pepper $0.98
  • Rice 1 cup
  • 1 cup chicken broth ½ cup water
  • Steak tip (only used ½ but cooked all) $2
  • 1 can of tomatoes $0.58
  • 1 can of kidney beans $0.68

You can even mix and match these ingredients and add variety to it with adding different spices, swapping in different meats, and even different veggies.

Chicken Soup with Beans and Rice

Seeing as I often cook whole chickens in the crockpot, I avoid wasting as little of it as possible. A lot of the meat is used right away for chicken soup with fresh made broth and Cesar salads; a good portion is frozen for later, but I never stop using the shredded meat for different kinds of chicken soups.

I like using some of the shredded meat from the whole chicken that I had cooked in the crockpot just a short while ago and mixing it with beans, fresh chicken broth, 1-2 TBS of butter, salt, pepper, garlic and Italian seasoning. This recipe too, cost less than $5 and can be made either on the stovetop or in the microwave (which is what I do).

Ingredients

  • Shredded Chicken
  • Fresh chicken broth
  • 1-2 spoonfuls of kidney beans
  • 1-2 tablespoons of butter
  • Splash of beef broth- fresh or from the box
  • 1 cup of rice + 1 cup of water (or a combination of butter, water, broth and seasoning)

Instructions

  1. Cook the rice as directed (and/or as described as above)
  2. Combine all ingredients in a microwave safe bowl
  3. Slowly heat the soup together
