BBQ Pulled Pork Sandwiches

Pulled Pork Sandwiches is one of my favorite no-brainer crockpot dinners. They are perfect for busy days, lazy-nights, and are great as leftover pasta dishes, and quesadillas. Even when I'm being super lazy with this dinner and barely adding any effort to side dishes, it's still a great dinner that comes out to be about $5!

What is better than having this turning out to be a $5 Dinner, is that it makes a cheesy, leftover recreation. Sauté garlic and onion with butter, salt and pepper, add the meat, cheese and pasta and you've got a new creation! For that full recipe, click here. Sweet potato fries and pulled pork sandwiches

Recipe Pulled Pork Sandwiches

Ingredients

  • 1 lb Poin loin chunk
  • 1 whole bottle of BBQ sauce
  • 4 hamburger buns
  • Paprika garlic, salt & pepper, Red Cayenne Pepper (not a lot though)
  • Optional 1/2 cup water (I sometimes forget it and it seems just fine)
BBQ Pulled Pork

Instructions

  • Place pork loin (frozen or defrosted) into Crockpot
  • Mix BBQ sauce, seasoning and garlic together and pour over pork lion
  • Cook on HIGH for 4-6 hours until thoroughly cooked
  • Check and flip pork loin every so often
  • After cooking, take out and shred on a cutting board.
  • * I like to take 2 forks and use the back of the forks to shred
  • Place shredded pork back into the crock pot and turn to LOW until dinner
  • Meanwhile, create your side dish(es)

Make it a Low Carb Side Dish

What you need to be careful of is that the pulled pork sandwiches use hamburger buns, so if you're working towards adhering to a low carb diet, you're already pushing it with just one bun. Here are some ideas for low carb side dishes:

  • Hawaiian Sweet Potato Fries
  • “Rice” Cauliflower- especially when you remind yourself that you are purchasing a head of cauliflower and then using a small portion of it each time you use it.
  • Steamed/Boiled Carrots: might sound a little icky, but it’s just to the point that they aren’t hard as arock. Cook with a little bit of water, 2 TBS of butter, a few cloves of garlic, salt and pepper and viola!It’s a delicious side dish.
